As the sun sets over Camelback Mountain and the lights begin to twinkle over Phoenix, a roaring fire pit ignites on the outdoor terrace, where guests gather on balmy nights to sip cocktails from the eclectic drink menu. Our favorites include the grapefruit gimlet, lychee bellini, and sour cherry caipirinha with sagatiba cachaca, sour cherry, lime, and Angostura bitters. The ginger Margarita is ideal for summer chillin’ — tequila is mixed with ginger and lime, and the rim soaked in ginger salt. If you’re hungry, pair this Margarita with the 18-oz. prime rib eye, seared and grilled to perfection.
