Celebrated executive chef Todd Sicolo leaned on his sense of humor when he came up with his signature carte at Frank & Alberts in the Arizona Biltmore. A meal that starts with charred chicken lollipops, accompanied by a so-called “not-so-local” mango dip and his “very local” chili sauce, alludes to the silly but scrumptious idea. Then it’s on to the Coca-Cola pork chop made with caramelized organic apples. Or, as an alternative, try a twist on classic comfort food from a dish called The Cheese, Mac, and the Chicken — where the bird is country fried and the sides are creamed corn and buttermilk biscuits. The topper, at the beginning or end of this fun-filled meal: candied apple martinis made with rain organic vodka, apple puree, and Monin cinnamon. The potent drink will tickle your taste buds as well as your sense of smell.
